Israeli Partnership Targets Climate-Resilient Alternative to Traditional Coffee Farming

Israeli companies Brevel and Coffeesai are developing lab-grown coffee cells using illuminated fermentation, aiming for climate-resilient coffee production.

Jerusalem, 24 June, 2026 (TPS-IL) — Brevel Ltd., based in Kiryat Gat, has partnered with Israel-based Coffeesai to accelerate the production of lab-grown coffee cells using an illuminated fermentation platform.

The technology uses controlled light inside fermentation tanks to influence cell growth and improve the production of desirable compounds, offering a potential alternative to traditional coffee farming, which is increasingly affected by climate change. Early trials reportedly show higher cell density and improved flavor-related properties, supporting the possibility of scalable production.

The foodtech and biotech companies said the partnership aims to advance a more stable, year-round method for producing coffee-related compounds, supported in part by a $1 million grant from the Israel Innovation Authority.
